Honey-Lime Chicken Skewers

As the weather has been gorgeous, I’ve been requested to make some grill-able meals.  Chicken and Veggie kabobs seemed like an easy yet delicious option.  I’m not going to do a separate post on the veggie kabobs (they were good but weren’t anything special) so I”ll just link the recipe here. Let’s get back to the chicken. First off, let me tell you that these smelled AMAZING while they were grilling.. and they tasted just as good when they were done! Although I used different marinades for the chicken and veggies, they still were a perfect pair! This chicken recipe was a HUGE hit with my family and they will be in the summer grilling rotation!

Honey-Lime Chicken Skewers

What you’ll need:

  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon vegetable oil
  • juice of one lime
  • 2 garlic cloves, minced
  • 1-2 teaspoon Siracha
  • red pepper flakes, to taste
  • 2 tablespoon cilantro
  • 1 pound skinless, boneless chicken breasts, cubed.

What to do:

  • In a small bowl, combine your ingredients, through the cilantro. Mix thoroughly.
  • Cube and skewer chicken, place in large ziplock (careful- you don’t want to poke holes in the bag!)  Pour marinade and turn to coat. Cover and allow to marinate for at least 1 hour (I marinated for almost 7… perfection).
  • Grill on medium high heat for 6 to 8 minutes per side, until juices run clear.
