Confetti Chicken Pasta

Yum.  This pasta has got it all- your veggies, carbs (my fave), and protein.  It’s all coated in creamy/cheesy goodness, which is always a bonus.  Because there’s so much to this pasta, you’ll be full after one helping, so it makes perfect leftovers (it reheats well, too). I’m interested in trying this with some other veggies, just to see how it’ll turn out.  Any suggestions?

Veggies and Chicken

What you’ll need:

  • 16 oz. of Whole Wheat Penne Pasta (always cook al dente in salt water according to pkg directions)
  • tbs. olive oil, divided
  • 2 Boneless Skinless Chicken Breasts, cut in 1″ cubes
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 cups onion, diced
  • 2 cloves garlic, minced
  • 1 Yellow bell Pepper, long thin slices (you could use orange and red, too)
  • cups broccoli florets
  • cups asparagus, chopped in 1″ pieces
  • cups grape tomatoes

What to do:

  • Cook pasta, drain.
  • Sprinkle the chicken with salt and pepper.
  • Heat 1 tbsp. oil in a skillet over medium heat and cook chicken until done and golden on all sides.  Remove, let rest in large bowl.
  • Add remaining olive oil and begin sautéing the onions for 2 minutes.  Add in garlic and bell pepper and sauté another 2 minutes.
  • Toss in any other woody veggies (broccoli, asparagus) saving the tomatoes until the very end.
  • When everything is cooked, combine the veggies with the chicken in the big bowl.

Spicy Cream Sauce

What you’ll need:

  • tbsp. butter
  • tbsp. flour
  • cups half & half
  • 1/4 tsp. of red pepper flakes
  • cup Parmesan cheese

What to do:

  • In the same pan you cooked the chicken and veggies in, you’ll make the roux. Melt the butter over medium heat.  Toss in flour and stir, cooking 1-2 minutes.
  • Slowly add in the half and half while stirring to prevent any clumps from forming.  Sprinkle in the red pepper flakes and allow to simmer until you see boiling action.  Stir periodically.
  • When your sauce begins to thicken and bubble, turn off heat and add in cheese.  Stir until “melty”.
  • To assemble everything,  add the pasta first so it gets nice and coated with sauce and then pour the veggies and chicken in.
